Chicken Korma


Low calorie cooking spray
1 onion, finely chopped
2 garlic cloves, finely chopped
4 skinless and boneless chicken breasts, cut into large chunks
1 tbsp korma curry powder
200g passata with onions and garlic
400ml boiling chicken stock
200g fat free natural fromage frais, plus extra to drizzle


Spray a non-stick frying pan with low calorie cooking spray and place over a medium heat. Add the onion and garlic and stir fry for 5 minutes or until they start to soften. Add the chicken and cook for 5 minutes or until the chicken and onion are nicely browned. Add the curry powder, passata and stock, season to taste and stir well.

Bring to the boil over a high heat and turn the heat to medium low. Simmer for 15-20 minutes or until the chicken is cooked through, stirring occasionally.

Remove the pan from the heat and stir in the fromage frais. Serve on a plate, drizzle the extra fromage frais.
