Ingredients
Pinch of salt
1 level tsp baking powder
1 level tsp ground almonds
100g low fat margarine suitable for baking
100g dark muscovado sugar
450g plain flour
2 large eggs, lightly beaten
4 level tbsp runny honey
25g icing sugar, made up according to packet instructions
1 level tbsp edible decorations such as 100s and 1000s
Method
Pre heat the oven to 160C / Fan 140C / Gas 3
Put the salt, baking powder, almonds, margarine and sugar in a food processor. Add the flour, reserving one teaspoon to dust and blend well. Slowly add the eggs and honey until the mixture comes together.
Dust a work surface with the reserved flour, roll out the mixture to a 5mm thickness and cut into desired shapes using a biscuit cutter. Re roll the trimmings and repeat until the mixture is all used. Arrange the cut biscuits onto a baking lined baking sheet and bake for 20 minutes.
Removed from the oven, transfer onto a wire rack and leave to cool. Decorate with icing sugar and scatter over the edible decorations before serving.
