Cauliflower and Broccoli Soup
1 tsp Cooking Oil or Sunflower Fry Spray
750ml Vegetable Stock
1 onion, chopped
1 garlic clove, finely chopped
1 broccoli, chopped
1 cauliflower, chopped
Salt and black pepper for seasoning
In a large cooking pot soften chopped onion and garlic in the cooking oil/fry spray (this only takes a few minutes), add the chopped broccoli, cauliflower and stock - stock should cover approx half the ingredients.
Add salt and black pepper and bring the stock to a simmer and cover with a lid. Once the ingredients have become soft (approx 20 mins).
Blend the ingredients until smooth, return to the heat and heat throughout, season to taste.
Tip - for a creamer soup add some cream or a couple of potatoes (boil potatoes before adding to the soup pot)
